Shrimp Scampi Pasta

A quick, one-pan shrimp scampi pasta with a garlic butter and white wine sauce, finished with fresh lemon and parsley.

Ingredients
  

  • 12 oz 340g linguine or spaghetti
  • 1 lb 450g large raw shrimp, peeled and deveined, tails on or off
  • 4 tbsp 55g unsalted butter
  • 3 tbsp 45ml extra-virgin olive oil
  • 6 cloves garlic thinly sliced (not minced)
  • 1/2 tsp red pepper flakes optional, adjust to taste
  • 1/2 cup 120ml dry white wine, such as Sauvignon Blanc or Pinot Grigio
  • 1/4 cup 60ml fresh lemon juice (from about 1 large lemon)
  • 1/2 tsp kosher salt plus more for pasta water
  • 1/4 tsp black pepper
  • 1/3 cup 15g fresh flat-leaf parsley, chopped
  • Zest of 1 lemon optional, for garnish

Method
 

  1. Bring a large pot of generously salted water (about 1 tablespoon salt per 4 quarts water) to a rolling boil. Add pasta and cook until 1 minute less than al dente (about 8-9 minutes for most dry pasta). Reserve 1 cup of pasta water before draining. Drain pasta (do not rinse).
  2. While pasta cooks, pat shrimp dry with paper towels. Season with a pinch of salt and pepper.
  3. In a large 12-inch skillet, heat 2 tablespoons butter and 2 tablespoons olive oil over medium-high heat until butter melts and sizzles. Add shrimp in a single layer (work in batches if needed). Cook undisturbed for 1-2 minutes until bottoms are pink and lightly browned. Flip and cook 1 minute more until opaque throughout. Transfer shrimp to a plate (they will finish cooking later).
  4. Reduce heat to medium. Add remaining 2 tablespoons butter and 1 tablespoon olive oil to the skillet. Add sliced garlic and red pepper flakes. Cook, stirring constantly, for 30-45 seconds until fragrant and garlic is just golden — do not let it burn.
  5. Pour in white wine and lemon juice. Increase heat to medium-high and bring to a simmer. Scrape up any browned bits from the bottom of the pan (this is flavor). Simmer for 2-3 minutes until the liquid reduces by about half.
  6. Add the drained pasta, cooked shrimp (and any accumulated juices), and 1/4 cup of the reserved pasta water. Toss gently with tongs for 1-2 minutes until the sauce coats the pasta and thickens slightly. If the pasta seems dry, add more pasta water 1 tablespoon at a time.
  7. Remove from heat. Toss in chopped parsley. Taste and adjust salt and pepper. Serve immediately, garnished with lemon zest if desired.

Notes

Storage: Leftovers keep in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet with a splash of water or pasta water to loosen the sauce. Not recommended for freezing as shrimp can become rubbery.
Substitutions: For a dairy-free version, use all olive oil instead of butter (total 5 tbsp oil). For gluten-free, use your favorite gluten-free pasta and cook according to package directions. This recipe contains shellfish and gluten. For dietary concerns, consult a qualified professional.
Safety tip: When working with hot oil and wine, keep the pan handle turned inward and use a long-handled spoon to stir. Handle shrimp with clean hands and cook to an internal temperature of 145°F (63°C) until opaque.
