Lemon Spinach Chicken Pasta

Ingredients
  

  • 8 oz 225g dried short pasta (penne, fusilli, or farfalle)
  • 1 lb 450g boneless skinless chicken breasts (about 2 small breasts)
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1/4 teaspoon red pepper flakes optional
  • 1/2 cup 120ml chicken broth, low-sodium
  • 3 tablespoons fresh lemon juice from 1 lemon
  • 1 teaspoon lemon zest
  • 1/2 cup 120ml whole milk (or half-and-half)
  • 1/3 cup 30g finely grated Parmesan cheese, plus more for serving
  • 3 cups 90g fresh baby spinach
  • Salt and black pepper to taste

Method
 

  1. Bring a large pot of salted water to a boil. Cook pasta 1 minute less than package directions for al dente. Reserve 1/2 cup pasta water before draining. Drain and set aside.
  2. While pasta cooks, pat chicken dry with paper towels. Season both sides with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  3. Heat olive oil in a large deep skillet over medium-high heat until shimmering. Add chicken breasts and cook 5-6 minutes per side, until golden brown and internal temperature reaches 165°F (74°C) on an instant-read thermometer. Transfer to a cutting board and let rest 5 minutes, then slice crosswise into 1/2-inch strips.
  4. Reduce heat to medium. Add garlic and red pepper flakes to the skillet. Cook 30 seconds until fragrant, stirring constantly to prevent burning.
  5. Pour in chicken broth and lemon juice. Scrape up any browned bits from the bottom of the pan with a wooden spoon. Let simmer 1 minute.
  6. Whisk in milk and lemon zest. Bring to a gentle simmer, then stir in Parmesan until melted and smooth. The sauce will be thin at this point.
  7. Add spinach to the skillet. Toss with tongs for 1-2 minutes until just wilted.
  8. Add drained pasta and sliced chicken to the skillet. Toss everything together. If the sauce seems too thick, add reserved pasta water a tablespoon at a time until it coats the pasta nicely. Taste and adjust salt and pepper.
  9. Serve immediately with extra Parmesan and a pinch of lemon zest on top.

Notes

Storage: Refrigerate leftovers in an airtight container for up to 3 days. The pasta will absorb sauce as it sits; revive with a splash of milk or broth when reheating. Freezing is not recommended due to the dairy sauce.
Substitutions: For a dairy-free version, use unsweetened oat milk or canned coconut milk (full-fat) and omit Parmesan or use a vegan Parmesan-style cheese. Use gluten-free pasta if needed.
Safety: Always cook chicken to an internal temperature of 165°F (74°C). Wash hands and surfaces after handling raw chicken. Keep hot oil away from children and pets.
