Ingredients
  

  • 2 cups fresh or frozen peas thawed if frozen
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup sliced radishes optional, for crunch
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice from about 1/2 lemon
  • 1 teaspoon lemon zest
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon fine sea salt
  • 1/8 teaspoon black pepper

Method
 

  1. If using fresh peas, blanch them: bring a medium saucepan of salted water to a boil. Add peas and cook for 1-2 minutes until bright green and tender. Drain immediately and transfer to a bowl of ice water to stop cooking. Drain well and pat dry.
  2. If using frozen peas, simply thaw them by running under cool water in a colander for 30 seconds, then drain thoroughly.
  3. In a small bowl or jar, combine olive oil, lemon juice, lemon zest, Dijon mustard, salt, and pepper. Whisk or shake until emulsified.
  4. In a large mixing bowl, combine the peas, crumbled feta, chopped mint, and sliced radishes (if using).
  5. Pour the dressing over the salad and toss gently to combine. Taste and adjust salt or lemon if needed.
  6. Serve immediately, or refrigerate for up to 2 hours before serving (toss again just before serving).

Notes

Storage: Best eaten within a few hours. If making ahead, keep dressing separate and toss just before serving. Leftovers keep in the fridge for 1 day, but peas may lose some brightness.
Substitutions: For a dairy-free version, omit feta and add toasted pine nuts or diced avocado. For extra protein, add cooked chickpeas or grilled chicken.
