Ingredients
  

  • 1 pound 450g short pasta (e.g., rigatoni or penne)
  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 28-ounce/800g can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • 8 ounces 225g low-moisture mozzarella, shredded
  • 4 ounces 115g pepperoni slices, halved
  • 1/4 cup 25g grated Parmesan cheese
  • 2 tablespoons fresh basil or parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Bring a large pot of salted water to a boil.
  2. Add the pasta and cook for 2 minutes less than the package directions for al dente. Drain and set aside. (The pasta will finish cooking in the oven.)
  3. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the onion and cook, stirring, until softened, about 4 minutes.
  4. Add the garlic and cook until fragrant, about 30 seconds. Stir in the crushed tomatoes, oregano, red pepper flakes (if using), 1/2 teaspoon salt, and a few grinds of black pepper. Simmer for 5 minutes, stirring occasionally.
  5. In a large bowl, combine the drained pasta, the tomato sauce, half the mozzarella, and half the pepperoni. Stir well to coat.
  6. Transfer the mixture to a 9x13-inch baking dish. Spread evenly. Top with the remaining mozzarella, pepperoni, and a sprinkle of Parmesan.
  7. Cover with foil and bake for 15 minutes. Remove the foil and bake for another 10 minutes, until the cheese is bubbly and golden brown in spots.
  8. Let rest for 5 minutes. Garnish with fresh basil or parsley before serving.

Notes

Storage: Cool completely, then refrigerate in an airtight container for up to 4 days. Reheat in a 350°F oven or microwave. Substitutions: Use any short pasta (ziti, shells). For a meatless version, omit pepperoni and add sautéed mushrooms or bell peppers. Allergens: Contains dairy (mozzarella, Parmesan) and gluten (pasta).
