- Prepare the grill for medium-high heat (about 400°F / 200°C). Clean and oil the grates.
- Pat chicken breasts dry with paper towels. Drizzle with 1 tablespoon olive oil, season evenly with 1 teaspoon salt and 1/2 teaspoon pepper.
- Place lemon halves cut-side down on the grill. Grill chicken for 5-7 minutes per side, until internal temperature reaches 165°F / 74°C (use an instant-read thermometer). Lemon halves should be charred and softened. Transfer chicken to a cutting board, rest 5 minutes, then slice against the grain.
- While chicken rests, brush cut sides of romaine halves with remaining 2 tablespoons olive oil. Grill cut-side down for 1-2 minutes until lightly charred but still crisp. Transfer to a platter.
- Make the dressing: In a small bowl, whisk together mayonnaise, 2 tablespoons fresh lemon juice from the charred lemon half, Dijon mustard, minced garlic, and Worcestershire sauce. Slowly stream in extra-virgin olive oil while whisking continuously. Add water to thin, then season with pepper. Taste and adjust salt if needed (the Parmesan adds salt later).
- To serve, arrange grilled romaine halves on plates or a large platter. Top with sliced chicken, a generous drizzle of dressing, shaved Parmesan (use a vegetable peeler for wide curls), and croutons. Finish with a final crack of black pepper.

Make ahead: Dressing keeps refrigerated in an airtight jar for up to 5 days. Let come to room temperature and whisk before using.
