Cucumber Mint Cooler

Ingredients
  

  • 1 large English cucumber about 12 oz, peeled and roughly chopped
  • 1/2 cup fresh mint leaves packed, plus extra sprigs for garnish
  • 1/4 cup fresh lime juice from about 2 limes
  • 2 tablespoons honey or agave syrup
  • 2 cups cold water
  • 1 cup ice cubes
  • Pinch of fine sea salt

Method
 

  1. Place the chopped cucumber, packed mint leaves, lime juice, honey, and a pinch of salt into a blender. Add 1 cup of the cold water.
  2. Blend on high for 45–60 seconds until completely smooth. The mixture should look uniformly green and frothy.
  3. Set a fine-mesh strainer over a large pitcher. Pour the blended mixture through the strainer. Use the back of a spoon to gently press on the solids to extract all the liquid. Discard the pulp.
  4. Add the remaining 1 cup of cold water and the ice cubes to the pitcher. Stir gently for 15 seconds to chill and dilute slightly.
  5. Taste. If you prefer a sweeter cooler, add another teaspoon of honey and stir until dissolved. If it's too strong, add a splash more cold water.
  6. Pour into glasses filled with ice. Garnish each glass with a fresh mint sprig and a thin cucumber slice. Serve immediately.

Notes

Storage: This cooler is best enjoyed within 2 hours of making. The mint flavor fades and the cucumber can develop a slight bitterness if stored overnight. To make ahead, blend and strain the cucumber-mint base (without water and ice), refrigerate for up to 6 hours, then add water and ice just before serving. For a fizzy version, replace 1 cup of cold water with sparkling water after straining. Allergen note: This recipe is naturally free from the top allergens.
