- In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper.
- Pat chicken thighs dry with paper towels. Rub the spice mixture all over the chicken.
- Place chicken in the slow cooker in a single layer. Add chicken broth, diced tomatoes (with their juice), and chipotle pepper if using.
- Cover and cook on LOW for 5-6 hours, or on HIGH for 3-4 hours. Chicken is done when it reaches 165°F internally and shreds easily with a fork.
- Using tongs, transfer chicken to a cutting board. Let rest 5 minutes, then shred with two forks.
- Skim excess fat from the cooking liquid. Stir in lime juice. Return shredded chicken to the pot and mix with about 1/2 cup of the liquid (add more if you like it saucier).
- Warm tortillas in a dry skillet over medium heat for 30 seconds per side, or wrap in foil and heat in a 350°F oven for 10 minutes.
- Serve chicken in tortillas with desired toppings.
Notes
Storage: Keep chicken and liquid in an airtight container in the fridge for up to 4 days. Reheat gently in a skillet or microwave, adding a splash of broth if dry. Freeze shredded chicken (without tortillas) for up to 3 months. Allergens: Check tortillas for gluten; corn tortillas are typically gluten-free. Dairy in toppings. For a milder version, omit chipotle. For extra flavor, brown the chicken in a skillet before adding to the slow cooker (adds 5 minutes).
