Ingredients
  

  • 2 large boneless skinless chicken breasts (about 1.5 lbs total)
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons water
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese plus more for serving
  • 3 tablespoons olive oil divided
  • 1 tablespoon unsalted butter
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 1 28-ounce can crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes optional
  • 8 ounces dried short pasta penne, rigatoni, or fusilli
  • 2 cups chicken broth low sodium
  • 4 ounces fresh mozzarella sliced into 1/4-inch rounds
  • 2 tablespoons fresh basil chiffonade (for garnish)

Method
 

  1. Place chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness with a rolling pin or heavy skillet. Pat dry with paper towels.
  2. In a shallow bowl, whisk together flour, garlic powder, onion powder, salt, and pepper. In a second bowl, beat the egg with water. In a third bowl, mix panko and 1/4 cup Parmesan.
  3. Dredge each chicken piece first in the flour mixture (shake off excess), then dip in the egg mixture, then press into the panko-Parmesan mixture, coating both sides evenly. Set on a plate.
  4. Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat until shimmering. Add the breaded chicken (work in batches if needed—do not overcrowd). Cook 3-4 minutes per side, until golden brown and internal temperature reaches 165°F. Transfer to a plate and tent with foil.
  5. Reduce heat to medium. Add remaining 1 tablespoon olive oil and butter to the skillet. Once butter melts, add onion and cook 3-4 minutes until softened. Add garlic and cook 30 seconds until fragrant.
  6. Stir in crushed tomatoes, oregano, basil, and red pepper flakes (if using). Scrape up any browned bits from the bottom. Cook 2 minutes, stirring occasionally.
  7. Add the pasta and chicken broth to the skillet. Stir to combine. Bring to a simmer, then reduce heat to medium-low, cover, and cook 12-14 minutes, stirring twice, until pasta is al dente and most liquid is absorbed. If too dry, add a splash of broth or water.
  8. While pasta cooks, preheat the broiler with a rack about 6 inches from the heat source.
  9. Slice the cooked chicken breasts into 1/2-inch strips. Arrange the strips on top of the pasta. Lay mozzarella slices over the chicken.
  10. Transfer the skillet to the oven and broil 2-3 minutes, until cheese is melted and bubbly with golden spots. Watch closely to avoid burning.
  11. Remove from the oven, let rest 2 minutes. Garnish with fresh basil and extra Parmesan. Serve directly from the skillet.

Notes

Storage: Leftovers keep in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of water or broth over medium-low heat, covered, for 5-7 minutes. The chicken will lose some crispness but the flavor remains. For best texture, do not freeze. Allergens: This recipe contains wheat (flour, panko), dairy (Parmesan, mozzarella, butter), and eggs. For a gluten-free version, substitute gluten-free flour (1:1 blend) and gluten-free panko. For dairy-free, use dairy-free Parmesan and mozzarella alternatives, and use olive oil instead of butter. For egg-free, omit the egg wash and use buttermilk or a slurry of 1 tablespoon flour + 2 tablespoons water to help the breading adhere. Always check labels of canned tomatoes for hidden ingredients.
