Biscuit Pizza Casserole

A hearty, one-pan meal with a layer of seasoned ground beef and pizza sauce, topped with buttermilk biscuit pieces and melted cheese. Ready in 30 minutes.

Ingredients
  

  • 1 lb ground beef
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 24-oz jar pizza sauce
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes optional
  • 1 16.3-oz can refrigerated buttermilk biscuits (8 count)
  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp unsalted butter melted
  • 1/2 tsp garlic powder
  • Fresh basil or parsley for garnish optional

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet (or use a separate skillet, then transfer to a baking dish), cook the ground beef over medium-high heat, breaking it apart with a spoon, until browned, about 5-6 minutes. Drain off excess fat if needed.
  3. Add the diced onion and cook until softened, about 3 minutes. Stir in the minced garlic, oregano, and red pepper flakes, cooking for 30 seconds until fragrant.
  4. Pour in the pizza sauce, stir to combine, and let it simmer for 2 minutes. Remove from heat.
  5. While the sauce simmers, open the biscuit can and separate the biscuits. Cut each biscuit into quarters (four pieces).
  6. Sprinkle 1 cup of the mozzarella over the meat sauce. Arrange the biscuit pieces evenly on top, pressing them slightly into the sauce.
  7. In a small bowl, mix the melted butter with garlic powder. Brush this mixture over the biscuit pieces.
  8. Sprinkle the remaining mozzarella and the Parmesan over the biscuits.
  9. Bake for 15-18 minutes, until the biscuits are golden brown and cooked through, and the cheese is bubbly. Let rest for 5 minutes before serving. Garnish with fresh basil or parsley if desired.

Notes

Storage: Cover leftovers tightly and refrigerate for up to 3 days. Reheat in a 350°F oven for 10 minutes, or microwave individual portions. To freeze, assemble the casserole without baking, cover tightly, and freeze for up to 2 months. Bake from frozen, adding 10-15 minutes to the cook time. For a vegetarian version, substitute the ground beef with 1 lb of cooked crumbled plant-based meat or sautéed mushrooms and bell peppers.
