- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Separate the 8 biscuits. Use your fingers to flatten each into a 4-inch round. Work gently—if the dough tears, press it back together.
- Place 1 tablespoon pizza sauce in the center of each round, leaving a 1/2-inch border.
- Top sauce with 2 tablespoons shredded mozzarella and 3 mini pepperoni slices (or 2 quartered regular slices). Don't overfill—excess filling will leak.
- Gather the edges of the dough up and over the filling. Pinch firmly to seal. Place seam-side down on the prepared baking sheet, spacing 2 inches apart.
- In a small bowl, mix melted butter, garlic powder, and oregano. Brush the tops of each bomb with the butter mixture. Sprinkle with Parmesan if using.
- Bake for 12–15 minutes, until the tops are deep golden brown and the filling is bubbling through any tiny cracks. Let cool on the sheet for 3 minutes before serving. The cheese inside will be molten hot.
Notes
Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a 350°F oven for 5 minutes to restore crispness (microwaving will soften the biscuit). For a vegetarian version, omit pepperoni and add chopped bell peppers or black olives. Allergy note: contains dairy, gluten, and eggs (in biscuit dough).
