Banana Peanut Butter Roll-Ups

A quick, no-cook snack with creamy peanut butter and ripe banana wrapped in a soft tortilla. The trick is in the spread and roll.

Ingredients
  

  • 2 8-inch flour tortillas (soft taco size)
  • 4 tablespoons creamy peanut butter or any nut/seed butter
  • 2 medium ripe bananas peeled
  • 1/2 teaspoon ground cinnamon optional

Method
 

  1. Lay one tortilla flat on a clean cutting board. Spread 2 tablespoons of peanut butter evenly over the entire surface, leaving a 1/2-inch border around the edge. This border helps seal the roll.
  2. Place one whole banana at the bottom edge of the tortilla, right on the peanut butter. If the banana is very curved, trim the ends slightly so it sits straight.
  3. Sprinkle half the cinnamon over the banana, if using.
  4. Fold the bottom edge of the tortilla up and over the banana, tucking it snugly. Roll tightly away from you, keeping even pressure so the peanut butter holds everything together. The border will help the seam stick.
  5. Place the roll seam-side down on the plate. Repeat with the second tortilla, peanut butter, banana, and cinnamon.
  6. Using a sharp knife, slice each roll crosswise into 6–8 pinwheels, about 1-inch thick. Wipe the knife clean between cuts for neat edges.
  7. Serve immediately. The peanut butter acts as a seal, keeping the banana from browning for about an hour.

Notes

Storage: These are best eaten fresh. If you need to prep ahead, wrap the whole roll tightly in plastic wrap and refrigerate for up to 4 hours. Slice just before serving. The banana will oxidize once cut. Substitutions: Swap peanut butter for almond butter, sunflower seed butter, or WowButter for a nut-free version. Use gluten-free tortillas if needed. Always check labels for allergens. Safety: Use a sharp knife and cut away from your fingers. This recipe does not require cooking.
