Method
 

  1. Preheat oven to 350°F (175°C). Line 6 cups of a standard muffin tin with paper liners or spray generously with nonstick spray. In a mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps. Crack the eggs into the bowl and whisk vigorously until fully combined and slightly frothy, about 30 seconds. The batter will be thin—that's correct. Divide batter evenly among the prepared muffin cups, filling each about 2/3 full. Bake for 10-12 minutes, until the edges are set and golden, the tops spring back when lightly touched, and a toothpick inserted in the center comes out clean. Let cool in the pan for 2 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

Storage: Keep in an airtight container in the fridge for up to 3 days, or freeze for up to 1 month. To reheat, microwave for 15-20 seconds or toast in a toaster oven.
